This sounds so familiar. Not that I’ve smoked a brisket. What I have done is gone to three different events in farmer’s backyards where their brisket wasn’t ready at the time advertised, or even close.
One of the guys said screw it and cut it up and served the meat anyway. I have to say it was some hard chewing, but the flavor was also not good.
We hung around at the one back yard until the brisket was done, at 8:00 PM instead of 4:00PM. Fortunately we didn’t run out of booze.
The other guy served hot dogs as a consolation prize. The good news was they were ready super fast and he had plenty of mustard.
